I Have Strawberries Out My Bunny Ears!

Fun and Delicious Recipe Using Gorgeous Strawberries From Dave's Country Store

Yesterday, I was scrolling through Facebook when I saw a deal I couldn't pass up, a flat of strawberries for $12! I jumped in my car and strolled over to Dave's Country Store to fill a cart with fresh, delicious, affordable produce. Dave's is a family-run grocery store located in North Lebanon full of the best deals and kindest employees! Their walk-in fridge is my favorite spot when it is time to re-stock on produce. They offer the best prices to fill my fridge with healthy snack options such as strawberries, oranges, apples, etc. You can keep up with their stock via Facebook, they post their deals daily! 

After passing out a few pints of strawberries to my neighbors I still had more than my family could possibly eat in a week so this weekend we decided to try out a fun recipe! 

Our choice was these adorable carrot patch brownie bites made with chocolate-covered strawberries on top of a brownie covered in mousse and crushed Oreos. 

Ingredients:

  • 1 box of brownie mix (as well as whatever ingredients it calls for to make the brownies)
  • 10 oz white chocolate melting wafers
  • orange food coloring
  • 12 strawberries
  • 1 Cup heavy cream
  • 1/4 Cup cocoa powder
  • 1/2 Cup powdered sugar
  • 12 Oreos 

Directions:

  1. Bake your brownies according to the box. We decided to make ours individual with a muffin tray but you can also do this in a brownie tray. Let them cool completely. 
  2. Next, make your chocolate covered strawberry "carrots"
    1. Wash the strawberries
    2. Melt your white chocolate wafers per the container's instructions. 
    3. Add orange food coloring to your white chocolate coating
    4. Use skewers to dip your strawberries in the chocolate and place on parchment paper to dry. I recommend drying the strawberries with a paper towel prior to dipping to help the chocolate stick
  3. Next step is the chocolate mousse. You can also use chocolate icing instead. 
    1. Whip the heavy cream, cocoa powder, and powdered sugar in a bowl until thick 
  4. Crush your Oreos 
  5. Now it is time for the best part, construct your work of art! 
    1. Spread the mousse or icing on the brownie
    2. place one of your "carrots"
    3. Sprinkle crushed Oreos around your planted "carrot"
  6. ENJOY! 

This was such a fun activity for me and the girls, we love baking together and showing off our creativity as we do. We felt this yummy treat matched the Spring weather we are finally starting to get here. It also went hand-in-hand with the beautiful face painting the girls had done at an event we attended earlier this morning in town.
